Friday Favorites: Easy Pepper Steak

TGIF! This week was a busy one for me. My department received new furniture so there was a lot of coordinating of old furniture haul off, IT unhooking and reinstalling computers and telephones, etc. Hopefully next week will give me a chance to organize my new desk space. Think I will hit up Target and The Container Store for some cute desk accessories.

Now onto Friday Favorites! Gotta love good friends that pass along good recipes! You know you're old when...you swap recipes :) This recipe is even hubby approved. Enjoy!

Friday Favorites: Roasted Sweet Potatoes

Earlier this year I shared our experience with Plated. (a meal subscription service). Ever so often we would get a vegetarian meal and they were usually as delicious as the others. This was one of my favorite, but the hubs wasn't a huge fan. Since he didn't enjoy this dish I've only stolen a portion of the recipe...the roasted sweet potatoes! The recipe is below and super simple to make.

Roasted Sweet Potatoes

1 lb sweet potatoes
1 Tbsp olive oil
1/2 tsp Kosher salt
pepper to taste
1/4 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp chipotle powder

Preheat oven to 425°F. Wash and cut sweet potatoes into 1/2 inch dice. In a bowl, toss sweet potatoes with olive oil, Kosher salt, pepper to taste, garlic powder, dried oregano, and as much chipotle powder as desired. Arrange in a single layer on baking sheet, transfer to oven, and roast until tender, about 20 minutes.

Favorite Pin Friday | Volume 52

Well loyal followers, if you have been around since the beginning then you have probably read almost every Favorite Pin Friday. Here we are at volume 52. A few weeks ago I shared volume 46 which marked the 1 year anniversary of Favorite Pin Friday when it came to actually timing, but today's post marks 52 of my favorite pins!

Lots has happened since the beginning and I love sharing my favorites. Starting next week I will be replacing Favorite Pin Friday with Friday Favorites. It could still be something I have pinned, a new product I'm loving, an outfit, a funny video. Whatever happens to catch my attention.

To mark the last Favorite Pin Friday I am sharing a recipe from Skinny Taste the hubs and I tried last week. I paired it with this fried rice recipe (minus the chicken).

Favorite Pin Friday | Volume 51

Back again for another Friday addition. Thanks for stopping by! A few months ago one of our Plated. meals was a breakfast pizza. (Read my Plated. review here.) It got my attention because I never thought about putting breakfast items in pizza form. The Plated. meal was ok. Both the hubs and I would have changed some things about it. Then just last week I came across this recipe (kind of like pizza!).

Favorite Pin Friday | Volume 41

Happy Friday! Yesterday was National Drink Wine Day...who participated?! :) My boss let me off work an hour early so I took advantage of the beautiful weather and sat on the porch with Lexi and drank a glass of wine.

Today's post revolves around adult beverages, but baking with them. When we were in Breckenridge (read about it here) we visited the Breckenridge Distillery. The hubs and I had been on a previous trip, but in four years they have really expanded. During the tour/tasting we tried their spiced whiskey. The spices used are inspired by the master distiller's grandmother's pumpkin pie recipe. Talk about delicious. I immediately though it would taste good in a cake. Here are some recipes I thought might be good to try it in.

Favorite Pin Friday | Volume 31

We're one week closer to Thanksgiving! What are you doing for the holiday? Anyone have holiday traditions? Leave it in the comments. I thought I'd share with you the two dishes (both from Pinterest) I'm making for Thanksgiving dinner. They both seem fairly easy and different from what I typically make.

On another note, the town we moved to finally got a Kroger Signature (small town struggles are real folks!). I've been twice, but can't wait to do my big grocery shopping soon. So much fresh produce!

Favorite Pin Friday | Volume 29

In my quest for a healthier diet I decided snacking is my weakness. Ok, really? I knew this all along, but was reminded of my bad snacking habits. I'm definitely a boredom snacker and too often reach for sweet things. I mean...hello...candy is delicious. If you're not a sweets lover then we just can't be friends...I'm sorry but you have to love a good dessert to be in my top 5. Just kidding, I love all my readers equally :) So here are a few ideas I found on Pinterest for healthy snacking. Enjoy!

Cinnamon Chocolate Chip Protein Bars

Cucumber Feta Bites

Hummus Chicken Salad with Crackers
from The Creative Bite
1/2 cup roasted white meat chicken
1/2 cup of your favorite hummus
1/4 cup of chopped green onions
Dash of salt.

Mix and serve on whole wheat crackers.

Favorite Pin Friday | Volume 22

TGIF! Every now and then I run across a yummy looking recipe on Pinterest that is vegetarian friendly. The hubs is a big meat eater, but I thought, maybe skipping meat once a week wouldn't be too bad. A coworker told me about her and her husband's meatless Mondays. So I searched "meatless Monday" on Pinterest and found so many recipes. Here are a few that caught my eye.

Favorite Pin Friday | Volume 21

We're back in business with Favorite Pin Friday. If you missed the explanation for last week's lack of posts you can read it here. Today's recipe was inspired by a couple of recipes I've found on Pinterest, this and this.


Easy, Make Ahead Breakfast Sandwiches

1 lb breakfast sausage
12 eggs
12 English muffins (original or wheat)

  1. Preheat oven to 350
  2. Brown breakfast sausage, drain off excess grease
  3. Grease muffin tin, crack and scramble 1 egg in each of the 12 muffin cups
  4. Divide breakfast sausage into each muffin cup
  5. Bake for 15-20 minutes, until eggs are cooked
  6. While egg muffins cool, open and toast English muffins under a low broiler. About 5 minutes or until golden brown.
  7. Remove egg muffins from tin, cut in half, and place one in each English muffin.
  8. Wrap in plastic wrap and refrigerate. 
Reheat for 30 seconds and enjoy!

Options:
  • Add vegetables (onions, bell peppers, tomatoes, mushrooms) or other meats (bacon, ham) to the egg muffins.
  • Add cheese to English muffins

Soft Chocolate Chip Cookies

I took advantage of a quiet Sunday afternoon and got back in the kitchen to bake. I was craving a warm chocolate chip cookie. When I traveled for work I often stayed at Hyatt Place hotels and one located in Dallas would heat up a chocolate chip and peanut butter cookie for me almost every night. It was a simple comfort of home that made hotel living easier to handle. I hope you enjoy this recipe!


Soft Chocolate Chip Cookies

8 Tbsp. butter, softened
½ cup sugar
¼ cup packed light brown sugar
1 tsp vanilla
1 egg
1½ cups all purpose flour
½ tsp. baking soda
¼ tsp. salt
1 cup chocolate chips (I used ½ cup milk chocolate and ½ cup white chocolate)

1. Preheat oven to 350°
2. Beat butter and sugars until creamy. Add vanilla and egg, beat until incorporated
3. Add flour, baking soda, and salt. Mix well. Add chocolate chips until incorporated
4. Drop by the spoonful onto greased baking sheet. Makes about 12 cookies.
5. Bake for 13-18 minutes, until edges are slightly brown
6. Let cool and serve
